There's no need for anything like that. If you do not have AMP pages any more then search engines will just see that they are 404s and remove them. You've put redirects in place, I assume from xxxx/amp to xxxx so neither real visitors nor search engines will have any problem going to the "new" version.

Note that AMP pages are not indexed by themselves: your regular pages are indexed, the AMP version is just an "alternate" version displayed under some conditions in search results instead of your regular pages.

The only SEO harm you will get is by not having AMP pages entirely. You cannot replace that.

If you paid with Paypal, you should go to your paypal account, find your subscriptions and cancel there. If you used Stripe (ie direct credit card) you should cancel from your dashboard.
